Coming to your mailbox soon...

Our pretty Save the Date!

We just ordered our Save the Dates this week, so they should be arriving at my apartment soon. We put a link to our Knot wedding site on the STD (nice abbreve I know haha), but this page is still a work in progress, so you'll have to keep checking back to see if we've updated it.

In other wedding news, we mailed in the contract and our first payment for the reception venue (Radisson Lord Baltimore) so we are officially locked in! Yay!

I have also planned the big day to begin my hunt for a wedding dress! :) My mom and I and Rachie are going to explore the wedding shops in Harford County on October 10. Anyone who wants to join is welcome!

Reception!

We've chosen a reception venue - The Radisson Lord Baltimore!


Ed and I went to visit the Radisson in Baltimore on Sunday so that I could see the facilities (he had already checked it out himself). We met with the wedding coordinator who gave us a tour of the main ballroom (see picture below), and the mezzanine area where we will most likely have our cocktail hour portion of the reception. The hotel is so beautiful, especially the crystal chandeliers in the ballroom and the carvings on the ceiling in the hotel lobby. There is so much detail in everything, so much character (the hotel was built in 1928)! Get excited to boogie down on the dance floor! :)

Project Eat Out Less

As a break from wedding-related posts, I thought I'd post tonight about my Project "Eat Out Less" initiative. As some might know, this project is sort of a slow-moving, not always heeded project of mine, but nonetheless, it has it's highpoints, one of which I'd like to showcase here. And, since I'll be "getting hitched" soon, how apropos to show my wonderful culinary talents here in my blog, and give you readers some ideas for quick, healthy meals.

This delicious feast comes from the one and only George Foreman "The Next Grilleration: Great Grilling Recipes" cookbook. Clever title I know.

In an effort to increase fruit in my diet, I grabbed some fresh pineapple at wholefoods yesterday, and wanted a way to incorporate it into my meal. Then a recipe popped into my head, one for Pineapple Honey Chicken Breasts. I had most of the ingredients already...so just had to make a pitstop for some chicken at Giant, and I was on my way.

Here are the tasty ingredients:

1/4 cup low sodium soy sauce
1 tsp ground ginger
1 tsp vegetable oil
1 medium garlic clove, minced
2 tbsp honey
4 boneless skinless chicken breasts, chicken breast halves
4 piece Pineapple, slices, 3" x 3/4", fresh, 1/2-inch thick (4 canned pineapple slices may be substituted)
1 cooking spray or vegetable oil for coating grill


Directions:
1. Coat your Foreman grill with cooking spray or vegetable oil and preheat to 375 degrees for 5 minutes.
2. Blend the soy sauce, ginger, oil, garlic and honey in a small bowl.
3. Place the chicken in the grill and spoon the soy honey sauce over each piece and Grill for 3 minutes.
4. Place 1 slice of pineapple on each piece of chicken and grill for 3-5 additional minutes.
5. Enjoy!

For dessert: Sprinkle a generous amount of cinnamon on a plate, coat slices of pineapple with cinnamon, then put on Foreman grill for about 2-3 minutes and you have a yummy treat!

Check out these pics below. Don't be scared by the chargrilled appearance of the chicken and pineapple...I may have just kept them on a little too long. It all depends on your taste! They tasted delish to me :P

We booked the church!! Mark your calendars now! Yay! :)

We have booked St. Joseph's Monastery in Baltimore for the wonderful day of June 18, 2010! Our ceremony will begin at 5pm, and please note: this is a Friday night, so guests will have to plan accordingly so that they can join us at the ceremony and boogie down with us afterwards at the reception! :) We debated over having a day versus evening wedding (most Catholic churches have evening mass on Saturdays making it hard to have evening ceremonies on Saturday) so we made the decision to do a Friday evening one. Now that we have the church set, we are still mulling over reception locales...among them the Radisson in downtown Baltimore. I will keep you updated when this gets set in stone.

The Church Expedition

This weekend, Ed and I will be going on a "church expedition" to try and narrow done once and for all at which church we would like to say "I do".

We are first going to take a look at St Joseph's Monastery in Baltimore:




Next, we are going to check out St Joseph Parish in Texas, MD (Cockeysville):

Then, we are gonna keep driving around the beltway to check out St Stephens in Baldwin, MD (Harford Co).

Then, based on which church we choose, we will then decide where the party will go down, aka the reception!

Sooo, that being said, I really don't have much else to blog on right now, until these two big decisions are made, church and reception. Just remember to keep June 25, 2010 open on your calendars!

On another front, we started looking at townhomes (both older and brand new) in Laurel (Anne Arundel Co) which is pretty much equidistant from Suitland and Mount St Joe's. An open floor plan conducive for entertaining is a must have on our list. So, look forward to many a party at Casa de Schultheis in the future.

So much to think about! :)

Possible Church

So, I'm trying to keep my sanity and resist the urge of stressing over wedding plans this early in the game, but there are so many options out there!

Before we start thinking about smaller details for the big day, first on our list of "to-dos" is picking a church we like and a reception location nearby.

One church we really like is Our Lady of the Angels Catholic Church (a Chapel in the Charlestown community in Catonsville, MD). Here are some pretty pictures of the chapel:

I'm engaged!!!

So, it's been almost exactly one week since Ed popped the question after dinner at Ruth's Chris. We were celebrating my birthday, and my newfound excitement about joining the ranks of iTunes users the world over made the realization that I would soon become Mrs. Schultheis even more exhilarating and enhanced the "Holy crap, he's proposing to me right now!!!" factor. Now, please note, this was a positive "Holy crap!!" because of course I accepted his offer, with a huge smile and kiss and definitely the giddiness of a child on Christmas Day.

As I look down right now at the shiny ring on my finger, I am constantly reminded of the big day awaiting us in June 2010. Less than a year and so much planning to do! But I'm also reminded of the new possibilities we have in store as we start our married lives together and our relationship continues to grow.



So, as you might imagine, it has been a little hard to concentrate at work, with countless wedding websites beckoning to me as I sit here in my cube, trying my hardest not to visit The Knot or even Brides.com. With so many websites catering to the burgeoning wedding industry, I admit I'm a little overwhelmed so far as a newly engaged person, trying to figure out what type of wedding I want, what theme, colors, flowers, you name it! Excitement has made me want to delve right into planning and sometimes it's hard to figure out where to start.

We know that we would like to have a Catholic ceremony, but have yet to pick a church. We would like to pick one in the Baltimore area, with a reception location nearby. We have considered holding the reception at a hotel, that way out of town guests can crash right upstairs after the reception, which promises to be a good time! I will update once we figure out our ceremony and reception locales.

So, off to the first major breakthrough I've had so far...

The theme, bridemaids' gowns and flowers!

First off, I want to go for a softer, romantic theme, incorporating colors like lavender, green, blue/violet, pale pink, and ivory/pearl.

I am pretty sure I want my bridesmaids to wear Lavender dresses (not sure about length yet, possibly on the longer side).
